Description
This rice krispie ice cream sandwich strawberry recipe is a creamy, crunchy, fruity twist on a nostalgic summer dessert. Perfect for BBQs, parties, or make-ahead freezer treats.
Ingredients
6 cups Rice Krispies cereal
1 bag mini marshmallows (10 oz)
3 tbsp unsalted butter
1½ pints strawberry ice cream
½ cup freeze-dried strawberries (optional)
Instructions
1. Melt butter in a large saucepan over medium-low heat.
2. Add marshmallows and stir until fully melted and smooth.
3. Fold in Rice Krispies and freeze-dried strawberries until coated.
4. Press half the mixture into a parchment-lined 9×13 pan. Freeze for 10 minutes.
5. Spread softened strawberry ice cream over the base layer.
6. Top with the second cereal layer, press gently, and freeze for 3–4 hours or overnight.
7. Lift out and slice with a warm knife. Serve immediately or store frozen.
Notes
You can customize with peanut butter, white chocolate, or a swirl of jam.
For cleaner slices, freeze longer and use a hot knife.
