Description
This easy rice krispie ice cream sandwich recipe brings together chewy marshmallow cereal bars and your favorite ice cream for a fun, frozen treat. Great for kids, parties, and nostalgic adults.
Ingredients
4 cups mini marshmallows
3 tablespoons unsalted butter
6 cups crisped rice cereal (gluten-free if needed)
1 quart vanilla ice cream (or other flavor), softened
Optional: sprinkles, mini chocolate chips, freeze-dried fruit
Instructions
1. Line a 9×13 baking dish with parchment paper and lightly grease.
2. In a large pot, melt the butter. Stir in marshmallows until melted and smooth.
3. Add crisped rice cereal and stir to combine evenly.
4. Press half the mixture into the prepared pan. Use another lined pan for the remaining half.
5. Let both layers cool to room temperature.
6. Spread softened ice cream on the bottom layer. Top with the second layer and press gently.
7. Freeze for 3+ hours until firm. Slice into squares and serve.
Notes
You can substitute different cereals for fun flavor variations, like strawberry or chocolate. For gluten-free, make sure your cereal and marshmallows are certified GF.
