Description
This rice krispy treat ice cream sandwich recipe is an easy, no-bake summer dessert made with crispy cereal treats and creamy ice cream in endless flavor combos.
Ingredients
3 tablespoons unsalted butter
1 (10 oz) bag mini marshmallows
6 cups crispy rice cereal
1.5 quarts vanilla or flavored ice cream
Optional: sprinkles, chocolate chips, peanut butter, freeze-dried fruit
Instructions
1. Line a 9×13-inch baking dish with parchment paper.
2. Melt butter in a pot and stir in marshmallows until smooth.
3. Remove from heat and mix in crispy cereal.
4. Press half of mixture into pan for base layer.
5. Spread softened ice cream evenly on top.
6. Top with remaining cereal mixture and press gently.
7. Freeze for at least 4 hours.
8. Slice into sandwiches and serve.
Notes
Use gluten-free cereal for a gluten-free version.
Let sandwiches sit out 5–8 minutes before eating for best texture.
