- 1 leg of lamb
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 1 cup chicken broth (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Mix together minced garlic, olive oil, rosemary, thyme, salt, and pepper in a small bowl.
- Rub the garlic mixture all over the leg of lamb.
- Place the lamb in a roasting pan and pour chicken broth around it if using.
- Roast the lamb in the preheated oven for about 90 to 120 minutes, or until the internal temperature reaches your desired doneness.
- Let it rest for 15 minutes before carving and serving.
Notes
Leftovers can be stored in the fridge for 3-4 days or frozen for longer shelf life. Reheat in the oven for best results.
