A Mediterranean-inspired, one-pan chicken dinner filled with creamy feta, vibrant spinach, and sweet sun-dried tomatoes. Easy, elegant, and comforting just like grandma used to make.

- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped and patted dry
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, diced
- 1 tbsp olive oil
- 1/2 tsp dried basil
- Salt and pepper to taste
- Kitchen twine or toothpicks (for securing)
Instructions
- Preheat oven to 375°F (190°C).
- Slice each chicken breast horizontally to create a flat pocket (but not all the way through).
- Season inside and out with salt, pepper, and dried basil.
- In a bowl, mix spinach, feta, and sun-dried tomatoes.
- Spoon filling into each chicken breast, then roll tightly and secure with toothpicks or kitchen twine.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear each roll-up for 2 minutes per side until golden.
- Transfer skillet to the oven and bake for 20 minutes or until chicken reaches an internal temp of 165°F (74°C).
- Remove twine or toothpicks before serving. Slice into spirals for presentation.
Notes
Dry the spinach thoroughly before mixing to avoid soggy filling. You can prep roll-ups a day ahead and bake when needed. Great with roasted vegetables or a fresh grain salad.
