Description

A hearty breakfast casserole combining savory sausage, crispy hash browns, and creamy eggs, perfect for feeding a crowd.


Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30-32oz) bag frozen shredded hash browns
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 2 cups shredded cheddar cheese
  • 8 eggs
  • 2 cups milk

Instructions

  1. Preheat your oven to 350°F and lightly spray a 9×13-inch pan with cooking spray.
  2. In a large skillet, cook the sausage until no longer pink; drain fat and set aside.
  3. Add the frozen hash browns to the same skillet and cook until lightly browned, adding oil if needed. Transfer to the greased pan.
  4. Layer the cooked sausage and shredded cheese on top of the hash browns.
  5. In a mixing bowl, whisk together eggs, salt, pepper, garlic powder, onion powder, and milk. Pour over the layers in the pan.
  6. To bake later, cover and refrigerate. When ready, uncover and bake for 35-40 minutes until the eggs are set and the top is golden.

Notes

For added flavor, mix cheeses like Monterey Jack or pepper jack; you can customize with vegetables too.
