- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup cooked beef bits
- 2 green onions, chopped
Instructions
- Preheat the Blackstone grill to medium heat.
- Scrub the potatoes and poke holes in them with a fork.
- Rub the potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Place the potatoes on the grill and cook for about 45-60 minutes, turning occasionally until tender.
- Remove from the grill and let cool slightly.
- Cut the potatoes in half and scoop out some of the flesh.
- Fill the potatoes with shredded cheddar cheese, sour cream, beef bits, and green onions.
- Return the potatoes to the grill for about 5 minutes to melt the cheese.
- Serve warm and enjoy!
Notes
You can prep the potatoes ahead of time by scrubbing and rubbing them with olive oil the night before. Customize toppings as per your family’s preferences.
