Description

A heartwarming casserole that combines browned beef, tender potatoes, corn, and a creamy, cheesy center, perfect for family meals.


Ingredients

  • 1.5 pounds ground beef
  • 1 large yellow onion (chopped)
  • 2 cloves garlic (minced)
  • 2 pounds frozen diced potatoes (such as O’Brien hash browns)
  • 1 can (15-ounce) whole kernel corn (drained)
  • 1 can (10-ounce) Rotel diced tomatoes with green chilies (undrained)
  • 1 can (10.75-ounce) condensed cream of mushroom soup
  • 1/2 cup beef broth or milk
  • 1 teaspoon dried paprika
  • 1 teaspoon dried parsley flakes (optional)
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt (to taste)
  • 2 cups shredded sharp cheddar cheese (divided)
  • 1/2 cup crispy fried onions or cooked, crumbled bacon (optional for topping)

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and chopped onion.
  2. Brown until the beef loses its pink and the onion softens. Drain any excess fat.
  3. Add the minced garlic and cook for one minute until fragrant.
  4. To the slow cooker, add the frozen diced potatoes, drained corn, undrained Rotel, and browned beef mixture. Stir gently.
  5. In a bowl, whisk the cream of mushroom soup with the beef broth or milk. Add paprika, parsley, chili powder, garlic powder, salt, and black pepper.
  6. Pour the soup mixture over the ingredients in the slow cooker and stir until combined.
  7. Sprinkle 1 cup of the shredded cheddar over the top and cover the slow cooker.
  8. Cook on low for 4 to 5 hours or on high for 2 to 2.5 hours, until potatoes are tender and the sauce bubbles at the edges.
  9. Near the end, sprinkle the remaining 1 cup of cheddar; let it melt for 5 to 10 minutes with the lid off. Add crispy fried onions or crumbled bacon on top.
  10. Taste and adjust salt and pepper. Let rest for 10 minutes before serving.

Notes

Store leftovers in an airtight container for up to 4 days or freeze for up to 3 months. Reheat in the microwave or oven.
