A comforting and flavorful dish featuring tender beef with creamy potatoes, all cooked slowly in garlic butter.
Ingredients

- 2 lbs beef chunks
- 1.5 lbs baby potatoes, halved
- 1 medium onion, sliced (optional)
- 2 carrots, chopped (optional)
- 1/2 cup butter
- 4 cloves garlic, minced
- 1 tsp Italian herbs
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup parsley, chopped
- 2 cups beef broth
- Salt and black pepper to taste
- Olive oil for searing (optional)
Instructions
- Pat the beef chunks dry and season with salt and pepper.
- Optional: Sear beef in olive oil for 2-3 minutes per side.
- Place halved potatoes in the slow cooker.
- Add seared beef on top of the potatoes.
- If using, scatter onions and carrots over the beef.
- Melt butter in a small bowl, then stir in garlic, herbs, and red pepper flakes.
- Pour beef broth over the ingredients in the slow cooker.
- Drizzle garlic butter sauce over everything, tossing gently to mix.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is tender.
- Taste and adjust seasoning as needed.
- Transfer to a serving platter and serve warm with sauce and parsley on top.
Notes
Feel free to prep ingredients the night before. Leftovers can be stored in the fridge for up to three days.
