Ingredients

- 4 chicken breasts
- 1 cup chicken broth
- 2 lemons (juiced and zested)
- 2 tablespoons olive oil
- 3 cloves garlic (minced)
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- Salt and pepper to taste
- 2 cups rice
- 4 cups water
- Chopped parsley for garnish
Instructions
- In a slow cooker, combine chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Stir until the salt dissolves and taste to adjust seasoning.
- Place the chicken breasts into the slow cooker and coat them with the lemon herb mixture.
- Cover and cook on low for 4-6 hours until the chicken shreds easily.
- In a pot, bring 4 cups of water to a boil. Add rice, cover, and reduce to a simmer. Cook for 18-20 minutes.
- Once the chicken is done, shred it and serve over the fluffy rice.
- Garnish with chopped parsley before serving.
Notes
Zest the lemon before juicing for maximum flavor. Customize herbs based on availability.
