- 4 chicken breasts
- 1 lemon (juiced)
- 1 tablespoon olive oil
- 2 teaspoons dried thyme
- 2 teaspoons dried oregano
- 4 garlic cloves (minced)
- 1 cup chicken broth
- Salt and pepper to taste
- 2 cups cooked rice
- Fresh parsley (for garnish)
Instructions
- In a slow cooker, combine the lemon juice, olive oil, thyme, oregano, garlic, chicken broth, salt, and pepper.
- Add the chicken breasts, making sure they’re well coated.
- Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
- Once done, shred the chicken using two forks and mix it with the sauce.
- Serve the chicken over fluffy rice and garnish with fresh parsley.
Notes
For a stronger lemon flavor, leave some lemon zest in the mixture. You can add vegetables for a complete meal. Stir in cream cheese or sour cream for a creamier texture.
