Description

A delicious slow cooker recipe featuring juicy chicken marinated in lemon and herbs, served over fluffy rice.


Ingredients

  • 4 chicken breasts
  • 1 lemon (juiced)
  • 1 tablespoon olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried oregano
  • 4 garlic cloves (minced)
  • 1 cup chicken broth
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Fresh parsley (for garnish)

Instructions

  1. In a slow cooker, combine the lemon juice, olive oil, thyme, oregano, garlic, chicken broth, salt, and pepper.
  2. Add the chicken breasts, making sure they’re well coated.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  4. Once done, shred the chicken using two forks and mix it with the sauce.
  5. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

For a stronger lemon flavor, leave some lemon zest in the mixture. You can add vegetables for a complete meal. Stir in cream cheese or sour cream for a creamier texture.
