- 1 cup rice
- 2 cups water

Instructions
- In a bowl, mix the lemon juice, lemon zest, olive oil, minced garlic, thyme, rosemary, salt, and pepper.
- Place the chicken breasts in the slow cooker and pour the lemon herb mixture over them.
- Add the chicken broth to the slow cooker, ensuring it covers the chicken.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through.
- In the last hour of cooking, add the rice and water to the slow cooker. Stir gently to combine.
- Once done, fluff the rice with a fork and serve the chicken on top, garnished with fresh parsley.
Notes
For extra flavor, let the chicken marinate in the lemon herb mixture for an hour before cooking. You can use bone-in chicken pieces for a different texture and taste. Adjust the herbs to your liking; fresh herbs can be used for a more robust flavor.
