Description

A simple yet delicious side dish with sweet baby carrots, savory garlic, and rich Parmesan cheese.


Ingredients

Scale
  • 2 cups baby carrots
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the baby carrots on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast in the oven for about 20 minutes, until tender.
  4. Remove from the oven; gently smash each carrot with the back of a fork.
  5. Sprinkle minced garlic and Parmesan cheese over the smashed carrots.
  6. Return to the oven and roast for an additional 5-7 minutes until the cheese is melted and golden.
  7. Garnish with fresh parsley if desired and serve warm.

Notes

For a bit of spice, add a pinch of red pepper flakes to the oil when tossing the carrots. Use freshly grated Parmesan for the best flavor.
