- 2 teaspoons cornstarch
- 1/4 teaspoon salt

- 3 teaspoons vanilla paste (or extract)
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice (or cinnamon)
- 1/3 cup brown sugar (for frosting)
- 3 1/4 cups powdered sugar
- Hand Mixer or Stand Mixer
- Baking Sheet
- Parchment Paper (or baking mat)
- Cookie Scooper (optional)

- Wilton Piping Tip #2A
Instructions
- Cream together softened butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until light and fluffy.
- In another bowl, whisk flour, baking powder, pumpkin pie spice, cornstarch, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing on low until combined.
- Cover and chill the dough for 30 minutes or overnight.
- Preheat oven to 350°F (177°C).
- Scoop 2-inch dough balls, flatten slightly, and place on a parchment-lined baking sheet.
- Bake for 10–12 minutes, then cool completely on the baking sheet.
- Whip all frosting ingredients together using a stand or hand mixer.
- Pipe frosting on cooled cookies in a swirl with Wilton Tip #2A, sprinkle with pumpkin pie spice, and enjoy!
Notes
Store in an airtight container at room temperature for up to 5 days or refrigerate for a week. Chill the dough for soft cookies, and don’t over-mix. You can make the frosting ahead and refrigerate it. Add chocolate chips or nuts for a twist!
