Description

Soft and creamy cookies full of fresh strawberry flavor, combining butter, cream cheese, and white chocolate.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cream cheese, softened
  • 1 cup chopped fresh strawberries
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat butter, granulated sugar, and brown sugar on medium speed for about 3 minutes until fluffy.
  3. Add vanilla extract and egg; continue mixing until incorporated.
  4. In a separate bowl, whisk flour, baking soda, and salt together.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Add cream cheese and beat until smooth.
  7. Gently fold in strawberries and white chocolate chips using a spatula.
  8. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 10 to 12 minutes, until edges are golden brown and centers are soft.
  10. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use very fresh strawberries and ensure they are dry when adding to the dough. Chill the dough if too soft.
