Delightful cookies combining classic cheesecake and strawberry flavors, soft and chewy with creamy goodness.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup strawberry jam
  • Fresh strawberries for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the creamed mixture, mixing until just combined.
  5. Fold in the cream cheese until well incorporated.
  6. Drop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, leaving space between each.
  7. Make a small indentation in the center of each cookie and fill it with strawberry jam.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  10. Garnish with fresh strawberries if desired. Enjoy!
