A delightful dish that combines savory chicken with the sweetness of strawberries, topped with a rich sauce made of strawberry jam and balsamic vinegar.

- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon good quality balsamic vinegar
- 1 tablespoon water (extra if mixture is too thick)
- ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with a sprinkle of salt on both sides and place them in the pan.
- Cook for about 4-5 minutes on one side or until a nice golden crust forms.
- Flip the chicken and cook for another 4-5 minutes or until the chicken is fully cooked through.
- Meanwhile, whisk together the strawberry jam, balsamic vinegar, and water in a small bowl.
- When the chicken is just about finished cooking, pour the jam mixture over the chicken, nestling it into the sauce and scraping up any brown bits on the bottom of the pan.
- Reduce the heat and bring the sauce to a simmer, letting it bubble for 2-3 more minutes or until it thickens a bit.
- Stir in most of the basil and simmer for 1 minute.
- Remove chicken breasts from the pan and pour sauce over the top of each piece.
- Sprinkle with goat cheese if desired and garnish with remaining basil and sliced strawberries.
Notes
Make sure the chicken breasts are of uniform thickness for even cooking. Use good quality balsamic vinegar for a deeper flavor.
