Description

A heartwarming cake that blends deep cocoa flavors with warm strawberry accents, perfect for gatherings and family occasions.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup homemade strawberry jam
  • 2 cups fresh strawberries, sliced
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1/4 cup strawberry puree

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until combined.
  4. Gradually stir in boiling water until the batter is smooth.
  5. Pour the batter evenly into the prepared pans and bake for 30-35 minutes.
  6. Allow cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  7. Spread homemade strawberry jam between the layers of cake and place sliced strawberries on top.
  8. To make the frosting, beat together cream cheese and butter until creamy.
  9. Add powdered sugar gradually, then mix in strawberry puree until smooth.
  10. Frost the top and sides of the cake with the strawberry cream cheese frosting and decorate with extra fresh strawberries.

Notes

For a lighter cake, swap half the oil for applesauce. Mixing homemade or store-bought jam allows flexibility in preparation.
