Description

Delightful cookies combining sweet strawberries with a soft and chewy base, perfect for any occasion.


Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup crushed freeze-dried strawberries
  • 1/2 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, combine flour, baking soda, and salt. Gradually blend this mixture into the creamed mixture.
  5. Fold in the crushed freeze-dried strawberries until evenly distributed.
  6. Roll dough into 1-inch balls and then roll in granulated sugar.
  7. Place on ungreased cookie sheets about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden.
  9. Allow cookies to cool on the sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For chewier cookies, slightly underbake them and let them sit on the cookie sheet for a few minutes before transferring to wire racks.
