Ingredients

  • 2 chicken breasts, cubed
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 2 cups corn (fresh, grilled, or canned)
  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1/2 cup cotija cheese (or feta)
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • 1 can black beans, rinsed and drained
  • 1 avocado, sliced
  • Optional: tortilla strips or lime wedges for garnish

Instructions

  1. In a bowl, toss cubed chicken with olive oil, cumin, chili powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium-high and cook chicken until golden brown and cooked through, about 8–10 minutes.
  3. In a separate bowl, combine corn with mayonnaise, sour cream, cotija cheese, lime juice, cilantro, and a pinch of chili powder. Mix well.
  4. Cook rice according to package directions if not already prepared.
  5. Assemble bowls with a base of rice, followed by chicken, corn mixture, black beans, and avocado slices.
  6. Top with extra cheese, cilantro, and tortilla strips if desired. Serve with lime wedges.

Notes

To meal prep, store all components separately and assemble before serving. Keep avocado fresh by adding right before eating. Great hot or cold!
