Ingredients

  • 2 salmon fillets
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/2 jalapeño, minced (optional)
  • Juice of 1 lime
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat a skillet over medium heat and add olive oil.
  2. Season salmon fillets with salt and pepper, then place them in the skillet. Cook for 4-5 minutes on each side or until cooked through.
  3. In a bowl, combine diced mango, red onion, jalapeño (if using), lime juice, cilantro, salt, and pepper to make the salsa.
