- 2 salmon fillets
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1/2 jalapeño, minced (optional)
- Juice of 1 lime
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat a skillet over medium heat and add olive oil.
- Season salmon fillets with salt and pepper, then place them in the skillet. Cook for 4-5 minutes on each side or until cooked through.
- In a bowl, combine diced mango, red onion, jalapeño (if using), lime juice, cilantro, salt, and pepper to make the salsa.
- Once the salmon is cooked, top each fillet with the mango salsa. Give it a little squeeze of lime to brighten it even more.
- Serve immediately and enjoy!
