Description
Thai Peanut Chicken Wraps are a quick, flavorful, and healthy meal featuring tender chicken, crunchy coleslaw, and a rich, creamy peanut sauce. Perfect for lunch or dinner, these wraps are easy to make and full of bold, satisfying flavors.
Ingredients
- 1/4 cup peanut butter
- 1/4 cup low-sodium soy sauce
- 2 Tbsp brown sugar or honey
- 2 Tbsp rice wine vinegar
- 1/2 Tbsp minced garlic
- 1/2 Tbsp minced ginger
- 1 tsp sriracha sauce
- 1–2 Tbsp water (optional)
- 2 chicken breasts, cooked and chopped
- 3 cups coleslaw mix
- 1/2 cup grated carrot (optional)
- 1/4 cup chopped cilantro
- 1/4 cup roasted, salted peanuts
- 4–6 tortillas
Instructions
- Whisk together peanut butter, soy sauce, brown sugar or honey, rice wine vinegar, garlic, ginger, and sriracha sauce in a small bowl. Add water if needed for a thinner sauce.
- In a large bowl, mix the chopped chicken, coleslaw mix, grated carrot, cilantro, and peanuts. Pour the peanut dressing over the mixture and toss until evenly coated.
- Let the mixture sit for a few minutes to absorb the flavors.
- Warm tortillas in the microwave for 30 seconds to soften them.
- Divide the filling evenly between the tortillas, wrap tightly, and serve immediately. Enjoy with extra peanut sauce for dipping if desired.
Notes
Serve Thai Peanut Chicken Wraps fresh for best flavor. Pair with extra peanut sauce, fresh fruit, or salad. Store filling and tortillas separately in the fridge for up to 3 days. Adjust spice level by adding more or less sriracha. Substitute tofu or chickpeas for a vegetarian option.
