Quick and easy chicken enchiladas made with shredded chicken, tortillas, cheese, and enchilada sauce, perfect for busy weeknights.

- 2 cups cooked shredded chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup enchilada sauce
- 8 flour tortillas
- 1/2 cup diced onions (optional)
- 1/2 cup sour cream (for serving)
- Chopped cilantro (for garnish, optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the shredded chicken, diced onions (if using), salt, and pepper.
- Spread a small amount of enchilada sauce on the bottom of a baking dish.
- Take a tortilla, fill it with the chicken mixture and sprinkle some cheese, then roll it up and place it seam-side down in the baking dish.
- Repeat with the remaining tortillas and chicken mixture.
- Pour the remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve hot with sour cream and garnish with chopped cilantro if desired.
Notes
Use rotisserie chicken for an even quicker option. Feel free to customize the filling with your favorite ingredients, like black beans or corn. For a spicier kick, add some jalapeños to the chicken mixture.
