Description

Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 2 cups powdered sugar
  • Red food coloring
  • Fresh strawberries (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until evenly mixed.
  3. Add the eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes until the batter is smooth and glossy.
  4. Stir in the boiling water; the batter will be thin.
  5. Pour the batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cool completely.
  7. For the frosting, whip the heavy cream until soft peaks form, then gradually add powdered sugar until firm peaks form.
  8. Add red food coloring until desired shade is reached.
  9. Frost the cooled cake and decorate with fresh strawberries.

Notes

You can use stabilized whipped cream for the frosting for a sturdier finish. This cake holds up for 2-3 days in the refrigerator.
