Ingredients

- 1 cup mushrooms, sliced
- 1 bell pepper, sliced
- 1 carrot, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- Cooked rice or noodles (for serving)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and ginger, and sauté for about 1 minute until fragrant.
- Add the broccoli, mushrooms, bell pepper, and carrot. Stir-fry for about 5-7 minutes until the vegetables are tender but still vibrant.
- Pour in the soy sauce and mix well. Season with salt and pepper to taste.
- Serve hot over cooked rice or noodles.
Notes
For more protein, consider adding tofu or tempeh. Garnish with sesame seeds or green onions for extra flavor.
