Ingredients
1 cup cooked jasmine rice
1 grilled chicken breast, sliced
1/2 cup roasted sweet potatoes, cubed
1/4 cup chopped cucumbers
1/4 cup sliced avocado
1 tbsp pickled onions
1 tbsp hot honey (or more to taste)
1 tsp olive oil
1 tsp soy sauce (optional)
Salt and pepper to taste
Fresh herbs for garnish (optional)
Instructions
1. Preheat oven to 400°F. Toss cubed sweet potatoes with olive oil, salt, and pepper. Roast for 20–25 minutes.
2. Grill or sear the chicken breast until cooked through, then slice it thinly.
3. Assemble the bowl starting with jasmine rice as the base.
4. Top with roasted sweet potatoes, grilled chicken, cucumber, avocado, and pickled onions.
5. Drizzle hot honey over everything, followed by soy sauce if using.
6. Garnish with fresh herbs if desired and serve warm.
Notes
This bowl is endlessly customizable—swap chicken for tofu, or hot honey for sriracha and agave.
