Instructions
- In a large pot, combine the long grain rice, chickpeas, and vegetable broth.
- Stir gently to settle the rice evenly.
- Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes.
- Remove from heat and fluff with a fork; let it rest for 5 minutes if there is visible moisture.
- Stir in lemon juice, chopped fresh herbs, and season with salt and pepper.
- Drizzle with olive oil before serving.
