- 3 to 4 ripe bananas, mashed
- 1/2 cup melted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat the oven to 350°F and prepare a 9×5-inch loaf pan.
- Mash the ripe bananas in a large mixing bowl.
- Add melted butter to the bananas and mix until smooth.
- Add sugar and mix until slightly lighter in color.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the banana mixture, mixing just until combined.
- If using nuts, fold them into the batter.
- Pour the batter into the prepared loaf pan and tap to remove air bubbles.
- Bake for 55 to 65 minutes, until a toothpick comes out clean or with a few moist crumbs.
Notes
Store leftover banana bread in an airtight container at room temperature for up to three days or freeze for up to three months.
