Description

A delightful, sweet, and moist banana bread that transforms overripe bananas into a comforting treat.

Ingredients

Scale
  • 3 to 4 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F and prepare a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a large mixing bowl.
  3. Add melted butter to the bananas and mix until smooth.
  4. Add sugar and mix until slightly lighter in color.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  7. Gradually add the dry ingredients to the banana mixture, mixing just until combined.
  8. If using nuts, fold them into the batter.
  9. Pour the batter into the prepared loaf pan and tap to remove air bubbles.
  10. Bake for 55 to 65 minutes, until a toothpick comes out clean or with a few moist crumbs.

Notes

Store leftover banana bread in an airtight container at room temperature for up to three days or freeze for up to three months.
