Ingredients
Scale
- 3 to 4 ripe bananas, mashed

- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup chopped walnuts or pecans (optional)
Instructions

- Mash the ripe bananas in a large bowl using a fork or potato masher.
- Stir the melted butter into the mashed bananas, then add sugar and mix until well combined.
- Beat in the eggs one at a time, ensuring each is fully combined before adding the next. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually fold the dry ingredients into the banana mixture until no streaks of flour remain.
- Fold in the chopped walnuts or pecans if desired.
- Pour the batter into the prepared loaf pan and bake in the oven for 55 to 65 minutes.
- Check doneness with a toothpick; it should come out clean or with a few moist crumbs.
Notes
Use very ripe bananas for the best flavor. Do not overmix the batter and feel free to add mix-ins like chocolate chips.
