Description

A simple and versatile spread of cold bites perfect for any gathering, featuring vibrant flavors and easy assembly.


Ingredients

  • 1 large English cucumber
  • 1 pint cherry tomatoes
  • 8 ounces fresh mozzarella balls or bocconcini
  • Fresh basil leaves, a small bunch
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons lemon juice, fresh
  • 1 teaspoon lemon zest
  • 1/4 cup finely chopped dill
  • 8 ounces smoked salmon, thinly sliced
  • 1 pound cooked and chilled shrimp, tails removed
  • 2 tablespoons olive oil
  • 1/4 cup finely chopped red onion
  • 1 tablespoon capers, drained
  • 1/4 teaspoon ground black pepper
  • Kosher salt to taste
  • 1 cup hummus, store bought or homemade
  • 1/3 cup olive tapenade or chopped olives
  • Crackers or small toasted bread slices
  • Wooden toothpicks or short skewers
  • Lemon wedges for serving
  • Optional: a handful of toasted pine nuts or chopped walnuts
  • Optional: a drizzle of honey for serving

Instructions

  1. Prepare the cream cheese spread by beating softened cream cheese with sour cream or Greek yogurt until smooth. Stir in lemon zest, 1 tablespoon lemon juice, half the chopped dill, and a pinch of salt. Set aside for 10 to 15 minutes.
  2. Slice the cucumber into 1/3 inch rounds and pat dry.
  3. Make tomato and mozzarella skewers, threading a tomato half, a small folded basil leaf, and a mozzarella ball onto a skewer.
  4. Assemble cucumber cream bites with a dollop of cream cheese mix on each cucumber round, topped with smoked salmon and dill.
  5. Prepare shrimp salad by mixing shrimp, red onion, remaining lemon juice, olive oil, remaining dill, and a pinch of pepper.
  6. Set out hummus and tapenade in a bowl, serve with crackers.
  7. Arrange the platter with all components.
  8. Garnish with pine nuts or walnuts if desired and drizzle olive oil over hummus.
  9. Let the platter rest in the fridge for 10 minutes before serving.
  10. Serve family style and enjoy.
