- 1 head cabbage, chopped
- 1 medium carrot, sliced or shredded
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 unit red bell pepper, sliced
- 1 teaspoon fresh thyme
- 2 scallions, sliced
- to taste salt
- 1 cup water or vegetable broth
- 1 unit Scotch bonnet pepper, optional
Instructions
- Prepare Your Ingredients: Chop the cabbage, slice the carrot and bell pepper, and mince the garlic and onion.
- Heat the Oil: In a large skillet, heat the olive oil over medium heat.
- Cook the Onions and Garlic: Add the chopped onion and garlic; sauté for about 3-4 minutes until golden.
- Add Carrots and Peppers: Toss in the sliced carrot and bell pepper; cook for another 3 minutes.
- Stir in the Cabbage: Gradually add the cabbage and mix well.
- Season Your Dish: Sprinkle in the thyme and salt, and add the Scotch bonnet pepper if desired.
- Add Water: Pour in the water or broth, cover, and let simmer for about 10 minutes.
- Finish with Scallions: Uncover, stir gently, and fold in the sliced scallions; cook for an additional 2-3 minutes.
