Description
A delicious and comforting dish of baked zucchini filled with ricotta and mozzarella cheese, topped with marinara sauce. Perfect for family dinners.

- 2 medium zucchini
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchini lengthwise into thin strips, about 1/4 inch thick.
- Mix the ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
- Spoon a small amount of the cheese mixture onto each zucchini strip and roll it up.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place the zucchini rolls seam-side down in the dish.
- Pour the remaining marinara sauce over the rolls and sprinkle with the remaining mozzarella cheese.
- Drizzle with olive oil and cover with aluminum foil.
- Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
This dish is excellent for gatherings and can be made ahead of time. Pair with a fresh salad or garlic bread.
