Description

A delicious and comforting dish of baked zucchini filled with ricotta and mozzarella cheese, topped with marinara sauce. Perfect for family dinners.


Ingredients

  • 2 medium zucchini
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchini lengthwise into thin strips, about 1/4 inch thick.
  3. Mix the ricotta cheese, 1/2 cup mozzarella cheese, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
  4. Spoon a small amount of the cheese mixture onto each zucchini strip and roll it up.
  5. Spread a layer of marinara sauce on the bottom of a baking dish.
  6. Place the zucchini rolls seam-side down in the dish.
  7. Pour the remaining marinara sauce over the rolls and sprinkle with the remaining mozzarella cheese.
  8. Drizzle with olive oil and cover with aluminum foil.
  9. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving.

Notes

This dish is excellent for gatherings and can be made ahead of time. Pair with a fresh salad or garlic bread.
