Description

Delightful and nostalgic Cinnamon Madeleines, perfect for family gatherings and busy weeknights.


Ingredients

Scale
  • 2 large eggs
  • 1 cup white sugar
  • 1 cup all-purpose flour
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup butter, melted and cooled
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350F (180C).
  2. Spray your madeleine molds with non-stick spray.
  3. Heat the eggs and sugar together in a double boiler over hot water, stirring constantly.
  4. Remove the bowl from heat to cool slightly and stir in flour.
  5. Stir in the melted butter, almond extract, and spices.
  6. Fill the madeleine molds with batter.
  7. Bake until lightly browned, about 15 minutes.
  8. Cool for one minute before removing from molds and transferring to wire racks.
  9. Sprinkle with powdered sugar or dip in chocolate as desired.

Notes

Allow cooling for a minute before removing from the molds. Enjoy with tea or coffee.
