Ingredients

- 2 large eggs
- 1 cup white sugar
- 1 cup all-purpose flour
- 1/8 teaspoon ground nutmeg
- 3/4 cup butter, melted and cooled
- 1/2 teaspoon almond extract
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat your oven to 350F (180C).
- Spray your madeleine molds with non-stick spray.
- Heat the eggs and sugar together in a double boiler over hot water, stirring constantly.
- Remove the bowl from heat to cool slightly and stir in flour.
- Stir in the melted butter, almond extract, and spices.
- Fill the madeleine molds with batter.
- Bake until lightly browned, about 15 minutes.
- Cool for one minute before removing from molds and transferring to wire racks.
- Sprinkle with powdered sugar or dip in chocolate as desired.
Notes
Allow cooling for a minute before removing from the molds. Enjoy with tea or coffee.
