Method
 

  1. Heat the vegetable oil in a large skillet or saucepan over medium heat.
  2. Add the chopped onions and sauté until softened and golden, about 5 minutes.
  3. Stir in the minced garlic and ginger paste, cooking for another minute until fragrant.
  4. Add the curry powder, turmeric, cumin, paprika, and chili powder (if using), stirring well to toast the spices for 30 seconds.
  5. Add the diced potatoes to the pan and stir to coat them in the spice mixture.
  6. Pour in the diced tomatoes, coconut milk, and water or chicken broth. Stir well and bring the mixture to a simmer.
  7. Cover and cook for 10-15 minutes, or until the potatoes are tender, stirring occasionally.
  8. Break the corned beef into chunks and add it to the curry. Stir gently to combine and cook for another 5 minutes, allowing the flavors to meld together.
  9. Taste and adjust seasoning with salt as needed.
  10. Garnish with fresh cilantro leaves and serve hot with steamed rice or flatbread.

Notes

For a spicier curry, increase the amount of chili powder or add fresh chopped chilies. You can also use sweet potatoes instead of regular potatoes for a slightly sweeter flavor.
