Description

A heartwarming casserole featuring roasted butternut squash and savory sausage, perfect for family gatherings and busy weeknights.


Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 1 pound of Italian sausage, bulk or sliced
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 cups of fresh spinach, roughly chopped
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt and pepper to taste
  • 1 cup of shredded cheese (like mozzarella or cheddar)
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 400°F (200°C) while you prepare your ingredients.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add in the diced onion and sauté until translucent, about 4-5 minutes.
  3. Add minced garlic and Italian sausage to the skillet. Cook until the sausage is browned and cooked through, around 7-10 minutes.
  4. Stir in butternut squash cubes and cook for about 5 minutes until slightly golden.
  5. Add chopped spinach, dried thyme, rosemary, salt, and pepper. Stir well until spinach wilts.
  6. Transfer the mixture to a greased casserole dish. Spread evenly and sprinkle cheese on top.
  7. Pop the dish in the oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving.

Notes

Serve with a side salad or crusty bread. Can store leftovers in the refrigerator for up to 3 days.
