- 1 medium butternut squash, peeled and cubed
- 1 pound of Italian sausage, bulk or sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 cups of fresh spinach, roughly chopped
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt and pepper to taste
- 1 cup of shredded cheese (like mozzarella or cheddar)
- Olive oil for sautéing
Instructions
- Preheat your oven to 400°F (200°C) while you prepare your ingredients.
- Heat a drizzle of olive oil in a large skillet over medium heat. Add in the diced onion and sauté until translucent, about 4-5 minutes.
- Add minced garlic and Italian sausage to the skillet. Cook until the sausage is browned and cooked through, around 7-10 minutes.
- Stir in butternut squash cubes and cook for about 5 minutes until slightly golden.
- Add chopped spinach, dried thyme, rosemary, salt, and pepper. Stir well until spinach wilts.
- Transfer the mixture to a greased casserole dish. Spread evenly and sprinkle cheese on top.
- Pop the dish in the oven and bake for about 25-30 minutes, or until the cheese is bubbly and golden brown.
- Let cool for a few minutes before serving.
Notes
Serve with a side salad or crusty bread. Can store leftovers in the refrigerator for up to 3 days.
