Ingredients

  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) whole tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup light beer
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 bell peppers, chopped (optional)
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Brown the beef: In a large skillet, brown the ground beef with chopped onion and garlic over medium heat. Drain any excess fat.
  2. Combine ingredients: In your crockpot, combine the browned beef, kidney beans, black beans, whole tomatoes, tomato sauce, light beer, and bell peppers if you’re using them.
  3. Mix well: Stir everything together until well mixed.
  4. Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Final stir: Before serving, give it a good stir and taste it. Adjust the seasoning if needed.

Notes

Feel free to adjust the spices, add vegetables, or use turkey for a lighter dish. Great with toppings like cheese, sour cream, and cilantro.
