- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) whole tomatoes, undrained
- 1 can (8 oz) tomato sauce
- 1 cup light beer
- 1 onion, chopped
- 2 cloves garlic, minced
- 1–2 bell peppers, chopped (optional)
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Brown the beef: In a large skillet, brown the ground beef with chopped onion and garlic over medium heat. Drain any excess fat.
- Combine ingredients: In your crockpot, combine the browned beef, kidney beans, black beans, whole tomatoes, tomato sauce, light beer, and bell peppers if you’re using them.
- Mix well: Stir everything together until well mixed.
- Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Final stir: Before serving, give it a good stir and taste it. Adjust the seasoning if needed.
Notes
Feel free to adjust the spices, add vegetables, or use turkey for a lighter dish. Great with toppings like cheese, sour cream, and cilantro.
