Description

A heartwarming dish of rice cooked with vibrant spices and tomatoes, perfect for family gatherings.


Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pan, heat olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the rice and cook, stirring frequently, until slightly toasted.
  5. Pour in the chicken or vegetable broth, diced tomatoes, chili powder, cumin, and salt.
  6. Bring to a boil, then reduce the heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
  7. Fluff the rice with a fork and garnish with fresh cilantro before serving.
