Description

Light and buttery French Madeleines with a delightful lemon zest flavor, perfect for family gatherings or a cozy afternoon snack.


Ingredients

  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/2 cup (100 g) granulated sugar
  • 3/4 cup (93 g) all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 Tablespoon fresh lemon zest
  • 6 Tablespoons (85 g) unsalted butter (melted and slightly cooled)
  • 1/4 cup (30 g) confectioners’ sugar

Instructions

  1. Combine the eggs and vanilla in a stand mixer and mix on high speed until pale, about 2 minutes.
  2. Add the sugar gradually while mixing on high for about 8 more minutes until it holds a ribbon.
  3. Whisk together the flour, baking powder, and salt in a separate bowl.
  4. Fold the dry ingredients into the egg mixture in thirds until just combined.
  5. Add the lemon zest and melted butter, folding gently again.
  6. Cover and chill the batter for 45 minutes to 1 hour.
  7. Preheat the oven to 375°F and grease the madeleine pan.
  8. Divide the batter among the molds in the madeleine pan.
  9. Bake for about 12 minutes until golden and springy.
  10. Cool slightly before removing from the pan and dust with confectioners’ sugar.

Notes

Use fresh lemon zest for the best flavor. These cookies can be stored in an airtight container at room temperature for up to 3 days or frozen for up to a month.
