Description

A nourishing and hearty dish combining chicken, sweet potatoes, and rice, perfect for family gatherings.


Ingredients

  • 2 Chicken breasts
  • 2 Sweet potatoes
  • 1 cup Rice (brown or white)
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 cup Vegetable broth or water

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Dice the sweet potatoes, toss them with olive oil, salt, pepper, garlic powder, and paprika, and spread them on a baking sheet. Roast for 20-25 minutes or until tender.
  3. While the sweet potatoes are roasting, cook the rice according to package instructions.
  4. Season the chicken breasts with salt, pepper, and any other desired spices. Cook in a skillet over medium heat until golden brown and cooked through, about 6-7 minutes per side.
  5. Slice the chicken and add it to the cooked rice along with the roasted sweet potatoes.
