- 2 Sweet potatoes
- 1 cup Rice (brown or white)
- 2 tablespoons Olive oil

- 1 cup Vegetable broth or water
Instructions
- Preheat the oven to 425°F (220°C).
- Dice the sweet potatoes, toss them with olive oil, salt, pepper, garlic powder, and paprika, and spread them on a baking sheet. Roast for 20-25 minutes or until tender.
- While the sweet potatoes are roasting, cook the rice according to package instructions.
- Season the chicken breasts with salt, pepper, and any other desired spices. Cook in a skillet over medium heat until golden brown and cooked through, about 6-7 minutes per side.
- Slice the chicken and add it to the cooked rice along with the roasted sweet potatoes.
