- 3 ripe bananas, mashed
- 1/2 cup mayonnaise
- 1 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour

- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
- In a large bowl, mix the mashed bananas, mayonnaise, sugar, eggs, and vanilla until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually add the dry ingredients to the banana mixture, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly and freeze. When reheating, an oven at 350°F for a few minutes wrapped in foil brings back freshness.
