Description

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup mayonnaise
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, mayonnaise, sugar, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days. For longer storage, wrap tightly and freeze. When reheating, an oven at 350°F for a few minutes wrapped in foil brings back freshness.
