Instructions
- Preheat the oven to 400°F (200°C).
- Season the Cornish hen with olive oil, rosemary, thyme, lemon zest, salt, and pepper.
- Arrange the chopped carrots, onion, and potatoes in a roasting pan.
- Place the seasoned hen atop the vegetables.
- Roast in the preheated oven for about 1 hour, or until the hen reaches an internal temperature of 165°F (75°C).
- Remove from the oven, let rest for a few minutes, then serve.
Notes
